Breakfast is served at the break of day in the main room of the monastery and not a minute later. Only the heaviest sleepers are at risk of missing it however, as by that time the gong will have resounded several times.
First, way before dawn, to awake the monks and enjoin them to purify themselves, cleaning their body with soap and water and their mind through meditation and recitation of mantra.
Second, when the sky is lightening up but the sun has yet to show itself, to remind the monks of their earthly duties, have them grab a broom, a knife, a pot, and prepare everything for the upcoming meal.
Third and finally, at sunrise, to call everyone, monks and guests alike, to the main room as time has come to break the night's fast.
Guests are expected to show up by that point less they want to wait half a dozen hours more before getting some fare (though, in truth, the monks are tolerant of their guests' schedule and a snack can always be obtained from the kitchen if asked politely).
The meal itself is a joyful experience. Monks are quite hungry by that point, and haven't taken an oath of silence or austerity, so they're eating and chatting quite happily. There will be more duties, mundane and religious, later. But, for now, it's break time, and in good company.
